Differentiating on low-temperature grinding<\/h2>\n

The friction heat of grinding drives off a spice's aromatic compounds. The faster grains are crushed, the more heat is generated, so mass-produced powder tends to lose more of its aroma. Zoff leads with low-temperature grinding and a washing-and-drying step before grinding to explain its difference from mass-market products.<\/p>\n

In India, the habit of buying whole spices and grinding them at home persisted for a long time. Buying powder was about saving effort, on the assumption that aroma was something you compromised on. Into that, Zoff placed a product that keeps its aroma even as a powder.<\/p>\n

By placing its production base in Chhattisgarh, close to where the raw material is grown, it shortens the sourcing distance. Its cost structure differs from brands based in Mumbai or Delhi.<\/p>\n

In spices, the large players (Everest, MDH, Catch, ITC's Aashirvaad, Tata Sampann, Badshah and others) hold the shelf, and it takes time for a D2C brand to get into retail. That structure is why the company's growth has been gradual.<\/p>\n

Indian spices vary widely in quality by growing area and production method. When sourcing spices for Japan, talking directly with a brand that can explain its production method, rather than only doing large-lot trades through a trading company, makes it easier to pin down the specification.<\/p>\n

What needs checking is whether the grinding temperature can be specified, whether there's a testing system for pesticide residues and ethylene oxide, and whether a certificate of analysis can be provided per lot. In 2024, residue issues came up with multiple Indian spice products, and a testing system is now a precondition for doing business.<\/p>\n
