Blinkit, the quick commerce company under Zomato, has announced "Bistro," a standalone app dedicated to 10-minute food delivery. The service delivers snacks and light meals within 10 minutes, clearly positioned as direct competition against rival Zepto's already-established "Zepto Cafe."
Blinkit already leads the market in 10-minute grocery delivery, and with Bistro it is moving in earnest into the "meal" category. Deepinder Goyal, who was CEO at the time (Albinder Dhindsa became CEO in February 2026), commented that "10-minute food, if executed right, changes the game." As customer expectations rise, the company has made clear its policy of competing on immediacy even in food delivery, beyond groceries.
What stands out is that Zomato previously attempted a 10-minute food delivery service called "Instant" in 2022 but withdrew from it in 2023. This Bistro launch is presumably a second attempt informed by that lesson, designed to make maximum use of Blinkit's existing infrastructure (dark stores and delivery network).

Swiggy has already rolled out Bolt in more than 400 cities nationwide, making Zepto Cafe and Bistro the late entrants. However, backed by Zomato's financial resources, delivery network, and brand recognition, Blinkit is expected to catch up at a fast pace.
What this Bistro rollout fundamentally shows is quick commerce companies vertically integrating from "grocery to food" This is the movement. India's food delivery market, currently a two-horse race between Zomato and Swiggy, is expected to become a three-way battle going forward as grocery-focused players enter.
